The secret behind real piza dough is that it can't be properly spun like that. If they're spinning it like that, it means they are using a dough with much more protein in it, usually some sort of a bread dough. That's why if I can, I'll watch them making the pizza. I try to frequent the places that _don't_ spin the dough. They invariably have a better crust.
