I've played with a lot of different wikis in the past year, including pbwiki, mediawiki, moinmoin (nice one that), twiki, confluence (Deis uses that for some things), qwikiwiki, lunawiki, phpwiki, pmwiki (good for some things), etc. One of my projects was to look into wikis. I'd recommend Dokuwiki for a good blend of pluggable functionality, flexible storage, and moderate power. It has ACLs as an inherent feature, rather than something tacked on (MediaWiki).
