Most likely it would darken the color slightly. (Or more than slightly, depending on how dark the dye is.) If you were thinking of doing it you could try a spot on the sole to see how it looks.

(I wasn't recommending oil instead of the pattens, just using to help with avoiding dirt getting into the pores of the leather and drying it out / being horrible to get out again.)
