Recipe: Grilled Eggplant
Scarcely even counts as a recipe, given how simple it is, but it's worth noting because it is *so* good. Thanks to my father for the suggestion.
Take an eggplant. (We did it with the round purple-and-white ones. No idea what they're called: the guy at the farmer's market simply named them "purple".) Slice it fairly thin -- quarter-inch slices or so. Brush on olive oil on both sides (I'm experimenting with flavored oils, which are proving interesting), and sprinkle with a bit of pepper and a dash of kosher salt.
Grill on direct high heat, pretty quickly -- 2-3 minutes per side, until each side has very dark grill marks. Serve immediately, and enjoy...

Yum!
In other news, I am currently working on a wee gift for you. It should be done by the end of the week, and soon after in the mail. I am having MUCH fun working on it today.
Hope you're having a great day,
Teri

And hope you like the eggplant. I think it's delish, and even my wife (who is not a big fan of the stuff) approved of this preparation. And it's about as easy as you could possible ask for...
Re: Yum!
BTW -- I have a "work in progress" page up for the piece, so you can see how it's coming along.

And -- tried your recipe! Neither Jatina or myself had ever had eggplant before, but oh my, it was good! We plan to make more tonight. :) Thanks so much for the tip!
