At my current employer, we've actually had people leave the firm for another position, return here, and bring that now-previous employer as a client.
It doesn't happen often, but it's very sweet when it does. :-)
(In the case of one of those "brought my employer back with me" situations, the former-employer was so overjoyed with our work that he, in turn, has recommended several new clients to us.)
Cynically, I also point out that unless you (universal you) is planning on dying in that job, you may someday want to be fondly remembered by your former co-workers in their new jobs...
Being nice about goodbyes is essential.
(Last item: I once quipped to a former co-worker who was about to quit a very hated job "Remember: no one remembers your first day, everyone remembers your last".)
