Ahhh -- there we go. When the bottom of the bottle is so rounded that it doesn't quite stand up any more; when the cap damn near pops off when you pull off the pull-ring; when you pour it and get a head worthy of the finest stout; all of these are signs that the cider is ready to drink. Mmmm...

But do so quickly, so as not to have a panic such as the one we had here in which the fridge appeared to be emitting strange yellow fluids all over the floor, and thus we feared it might be defrosting or emitting coolants or something, or at the very least had a band of incontinent fairies taking up residence beneath.

Turns out one of the cider jugs suicided.

I was going to say "I am not a brewer, but I'm pretty sure that if your fermentation is changing the shape of your bottles, something is badly wrong." Then I realized you must be using plastic. Which I would have thought brewers would have religious objections to.

It's not brewing per se, but rather just letting the cider ferment right in the original jug. Its an old folk recipie that pretty much consists of doing nothing.

I commend your restraint! I like cider that's fermented, but I also like real cider which isn't -- so it usually gets consumed before the point you're at!

There's another partial bottle of pasteurized sweet cider in the fridge, separate from the fermentation project....
